What’s for dinner? 30 minute menus for 2009 – 21st edition

Wow! This is Memorial Day weekend. Can you believe it? I hope you have a great weekend planned.

I will be hosting a Memorial Day BBQ at our local park. The Mixed Grill will be perfect because I can make it up and take it to the park in (you guessed it) 30 minutes, totally! The food is very portable, so you can also take it with you wherever you go.

For our appetizer course while people are gathering, we will have an At-The-Cheese-Ball appetizer course. This will be the perfect accompaniment to our informal barbecue. The course includes cheddar cheese balls; summer sausage with roasted garlic mustard; vegetable platter with pear slices and tomato chutney; tortilla chips, herb crackers and honey roasted almonds.

You’ll find that I use various cooking methods, mix and match, to get dinner on the table fast! (The ingredients in parentheses show some of my quick prep steps.) You can always substitute your favorite made-from-scratch recipes when you have more time.

Sunday:
Chicken breast en croute (boneless, skinless chicken breasts, crescent rolls)
Roasted Brussels Sprouts and Pearl Onions (Frozen Pearl Onions)
Egg and Tomato Salad with Pink Mayonnaise
Special pears (canned pears)

Monday (Memorial Day):
Mixed Grill BBQ Party
3 Bean Salad (3 Bean Jar Salad)
Cole Slaw (bagged salad mix, jarred salad dressing)
corn on the cob
Chips
Baked beans (canned beans)
Grilled Fruit Skewers with Lemon Dip (purchased yogurt)

Tuesday:
Broccoli Cream (vegetarian)
Artichoke crostini (artichokes in jar)
caramelized peaches

Wednesday:
Fiesta Chicken (boneless, skinless chicken breasts, Ro*Tel canned tomatoes)
Yellow rice (boxed rice mix)
Mexi corn (canned corn)
Pear salad (canned pears)
Banana Pudding (purchased vanilla wafers, instant pudding mix)

Thursday:
Meatball Casserole (Frozen Meatballs)
Bread Bowls (chilled crackers)
Fruit salad (canned fruit)
Buckeye Chocolate Chippers (prepared cookie dough, canned chocolate frosting)

Friday:
Tuna salad not from your mom
rolls
Lemon Puff Pastry Cups (Puff Pastry Cups, Lemon Pudding Mix)

Saturday:
French Burgers with White Wine Sauce
Egg noodles (bought noodles)
Asparagus
Melba Melba Parfaits (purchased ice cream, canned peaches, jarred raspberry jam)
