Indian Dessert Recipes – Milk Cake

In this particular article, I am going to tell you how to make different types of Indian sweet cakes.

1) Gram Flour Cake

Instructions:

  • Heat a little oil in a nonstick skillet over medium heat, add chickpea flour and toast until a nice aroma starts to come out.
  • In a large bowl add 1 cup of oil with toasted gram flour, mix well and set aside for 15-20 minutes.
  • Heat the water in a saucepan over low heat, add the sugar and bring to a boil.
  • Keep boiling until 1/3 of the original amount remains.
  • Now add the mixture of gram flour and oil to this sugar syrup.
  • Now add a cup of oil at intervals to prevent the mixture from drying out and mix well.
  • Keep stirring continuously.
  • Remove the mixture from the heat and pour into a well-greased dish.
  • Press the top cover slightly.
  • Decorate with cashew nut.
  • Keep in a freezer for 1-2 hours and allow it to cool.
  • Cut it into square or diamond-shaped pieces.

2) Fig Cake

Instructions:

  • Drop 10 figs in the water for a few hours.
  • Drain and set aside for 2-3 hours.
  • In a grinder, add the soaked figs and puree smoothly.
  • Heat the oil in a frying pan over low heat, add the figs, condensed milk and sugar, stirring continuously.
  • Fry until a soft lump remains.
  • Add cardamom powder and chopped pistachios, mix well.
  • Remove from heat and pour onto a well-greased plate.
  • Lightly press the top lid and decorate it with grated coconut and almonds.
  • Store in the freezer for 1-2 hours and allow to cool.
  • Cut it into square or diamond-shaped pieces.

3) Milk Cake

Instructions for making cottage cheese:

  • Boil the milk in a saucepan over medium heat, when it starts to boil, add the lemon juice.
  • When the curds begin to separate from the water, turn off the gas.
  • Once the cottage cheese has separated from the water, drain the water through a colander.
  • Wrap the cottage cheese in a muslin cloth and squeeze out more water.

To make milk cake:

  • Boil the milk in a pan over medium heat until it becomes half the original amount.
  • Add the cottage cheese to the milk and mix well.
  • Cook this mixture until it thickens.
  • Make a soft dough with this mixture.
  • Add a little sugar to the mass and cook until the mixture softens.
  • Remove from heat and pour onto a well-greased plate.
  • Lightly press the top lid and decorate with the almonds.
  • Store in the freezer for 1-2 hours and let cool.
  • Cut this dove into square or diamond-shaped pieces.
